From Gary

Just some observations:

In no particular order......

There are no fat people here. In a country with a very rich cuisine very few people are over weight.  USA has serious health issues with obesity

We have been to many towns and driven hundreds of miles and only yesterday saw our first McDonald's.   Maybe that explains above but I think it's more complicated than that.

Every Restaurant here is family owned and operated with pride.  They are handed down from generation to generation. They usually have a photo of the restaurants founder, a grandparent or great grandparent that is 100 years old in the entrance.   In Houston a city of 5 million people we have very few family restaurants and in Katy even fewer. We have corporate restaurants lining the freeway on both sides that serve up leftover food processed in their factories, vacuumed sealed and warmed up for the masses that don't care about quality healthy food.

Everything here is organic. There is not the choice  it's just the way it is.

Other than toilet tissue and Kleenex, There are no paper or plastic products in the stores.  There is no waste.  There are no plastic bags or litter. Their environment is clean and free of litter.

Rosemary grows here everywhere. It is trained into hedges and covers the walls of buildings. We are cookingtonight and will just step outside and clip some from our hedge.
